Basic Rub
A great rub for any meat.
1/2 cup sweet paprika
1/2 cup ground cumin
1/2 cup chili powder
1/2 cup kosher salt
1/2 cup garlic powder
3 tbs ground black pepper
1 tbs dry mustard
Mix ingredients well and store in an airtight container, if not using immediately. Rub on any meat before smoking, grilling, spit-roasting, or cooking in a dutch oven.
Makes about 2 1/2 cups.
